  • 1/4 cup packed light brown sugar
  • 1/2 cup quick oats
  • 1/2 cup pecans, finely chopped
  • 3/4 cup raspberry preserves
  • 3/4 cup fresh raspberries
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Pan: Preheat your oven to 375ºF (190ºC). Line a 9×13-inch baking pan with non-stick foil, ensuring it hangs over the edges for easy removal. Alternatively, use regular foil and spray it thoroughly with nonstick cooking spray.
  2. Make the Crust Base: In a large mixing bowl, using an electric mixer on low speed, combine the flour, granulated sugar, and salt for about 5 seconds until just mixed. With the mixer still on low, add 1 cup (2 sticks) of the room temperature butter, one piece at a time, until fully incorporated. Continue mixing on low for an additional 1 to 1 ½ minutes, until the mixture resembles coarse crumbs.
  3. Bake the Crust: Reserve 1 ¼ cups of this flour mixture and set it aside for the streusel topping. Evenly pat the remaining flour mixture into the bottom of the prepared baking pan. Bake the crust for 14 to 18 minutes, or until the edges begin to turn a light golden brown. Keep the oven on.
