Why These Italian Ricotta Cookies Are a Must-Make

In the bustling lead-up to the holidays, time is often a precious commodity. While traditional rolled and cut sugar cookies are beautiful, their intricate decoration can be time-consuming. This is where the magic of these ricotta cheese cookies truly shines. They offer all the charm and festive appeal of holiday baking without the extensive effort.

  • Effortless Elegance: Forget the rolling pins and intricate cutters! These exquisite ricotta cookies are made by simply scooping the soft dough onto parchment paper-lined baking sheets. After a quick bake, they’re ready to be topped with a delightfully easy powdered sugar frosting, making the entire process remarkably straightforward and stress-free.
  • Unmatched Flavor and Texture: These aren’t just easy; they’re incredibly delicious. Their tender, cake-like consistency is a unique experience, a delightful departure from denser cookie varieties. Even before they’re frosted, their rich flavor captivates. My frosting-loving husband, who can often be a tough critic when it comes to new recipes, raved about these cookies even before they were iced! And rest assured, his hearty endorsement certainly extended to the finished, frosted masterpieces.
  • Versatility for Any Occasion: While they shine brightly as Italian Christmas Cookies, their simple elegance and delicious flavor make them suitable for any celebration throughout the year. With a simple change of sprinkle colors, these cookies can transform to fit St. Patrick’s Day, Valentine’s Day, bridal showers, baby showers, or any special event, proving their endless versatility.

Ingredient Deep Dive for Perfect Ricotta Cookies

The success of these soft and flavorful cookies hinges on a few key ingredients. Paying attention to their quality and how they’re handled will ensure a truly exceptional batch every time.

  • Whole Milk Ricotta Cheese: This is the star ingredient! Always opt for whole milk ricotta. The higher fat content is crucial for achieving that characteristic soft, tender, and moist texture. Skim or part-skim ricotta won’t yield the same rich results. For this recipe, you’ll need 15 ounces, so if using a 16-ounce container, simply remove about a tablespoon.
  • Butter: I typically use salted butter for its balanced flavor. If you prefer or only have unsalted butter on hand, simply add an extra pinch of table salt to the dry ingredients to ensure the flavors pop. Remember to have your butter at room temperature for optimal creaming with the sugar.
  • Eggs: Large eggs are standard in most baking recipes. Like butter, ensure your eggs are at room temperature. This helps them emulsify better with the other ingredients, leading to a smoother, more uniform dough.
  • Flour, Sugar, Salt, Baking Soda: These are your baking staples that form the backbone of the cookie. All-purpose flour provides structure, sugar adds sweetness and contributes to tenderness, salt balances the flavors, and baking soda ensures a light, cakey lift.
  • Real Vanilla Extract: The quality of your vanilla makes a significant difference. Always choose real vanilla extract over imitation. The complex, aromatic notes of real vanilla enhance the overall flavor profile of the cookies, making them truly special.
  • Powdered Sugar (Confectioners’ Sugar): Essential for creating that velvety-smooth frosting. For the silkiest glaze possible, I highly recommend sifting your powdered sugar before mixing. This eliminates any lumps and ensures a consistently smooth texture.
  • Almond Extract: While vanilla anchors the cookie’s flavor, a touch of almond extract in the frosting adds a sophisticated and wonderfully complex taste that beautifully complements the ricotta base. It’s a classic pairing in Italian-American baking.
  • Colored Sprinkles or Sugar: These add a festive flourish and can be customized for any holiday or occasion. A crucial tip: if you’ve had sprinkles or colored sugar for a while, give them a quick smell and taste test. Sprinkles can lose their quality over time and, surprisingly, even go rancid, which would unfortunately spoil the taste of your otherwise perfect cookies. Fresh sprinkles ensure both visual appeal and a pleasant texture.
  • Milk: Used in the frosting to achieve the desired consistency. Start with the smaller amount and add gradually until your frosting is spreadable but not too thin.

Expert Tips for Baking Perfect Ricotta Cookies Every Time

While the exact origin of these delightful cookies may be debated – whether truly Italian or a wonderful Italian-American contribution – their status as a Christmas classic for countless families across the US is undeniable. Traditionally, they are often flavored with lemon or anise, offering a bright, distinctive taste. For this recipe, I’ve opted for classic vanilla in the cookies themselves and a fragrant almond extract in the frosting. However, feel absolutely free to customize the flavorings to suit your family’s preferences. A hint of lemon zest in the dough or a few drops of anise extract can transform them beautifully.

  • Room Temperature Ingredients are Key: As with nearly all baking, ensuring your butter and eggs are at room temperature is fundamental. Room temperature butter creams more smoothly with sugar, incorporating air for a lighter texture. It should be soft enough to indent easily but not greasy or melted. Similarly, room temperature eggs emulsify better, leading to a more consistent and cohesive dough.
  • Achieve Uniformity with a Cookie Scoop: For consistently sized cookies that bake evenly, a cookie disher (or cookie scoop) is an invaluable tool. I typically use a smaller scoop for most of my cookies, but a medium scoop also works well; just adjust your baking time accordingly. Uniform size ensures every cookie bakes to perfection, preventing some from being overdone while others are undercooked.
  • Shape for Perfection: After scooping, a quick pro-tip is to gently roll the dough balls between your palms. This helps create a perfectly round shape, resulting in beautifully uniform and aesthetically pleasing cookies once baked.
  • Parchment Paper is Your Best Friend: Always bake on parchment-lined baking sheets. This prevents sticking, promotes even browning, and, perhaps most importantly, makes cleanup an absolute breeze. You can often reuse the same sheet of parchment paper for subsequent batches of the same cookies, making your baking process more efficient.
  • Patience for Icing: It’s crucial to let the cookies cool completely on wire racks before applying the frosting. Attempting to ice warm cookies will result in melted, messy frosting. Once frosted, immediately add your sprinkles or colored sugar while the frosting is still wet, allowing them to adhere properly. For different holidays or events, simply vary the colors of your decorations to match the theme. Candied cherries can also make a delightful addition for a classic Christmas look.
  • Frosting Techniques: For spreading the icing smoothly, an offset spatula is ideal. Its angled blade makes it easy to glide over the cookie surface. Alternatively, for a quicker method, hold the cookies by their sides and gently dip their tops into the bowl of frosting. This creates a neat, even coating with minimal effort.

Frequently Asked Questions About Italian Ricotta Cookies

How Do You Store Ricotta Cookies?

To maintain their freshness and tender texture, store your Italian Ricotta Cookies in an airtight container at room temperature. If they are frosted, allow the frosting to set and dry completely for at least two hours before stacking them. For optimal storage of frosted cookies, place a sheet of wax paper between each layer to prevent sticking and preserve the frosting’s appearance. These cookies do not require refrigeration, making them easy to store on your counter or pantry shelf.

PRO-Tip: The delicious glaze can unfortunately soften over time, especially in humid conditions. If you plan to give these cookies as gifts, for the best presentation, consider frosting them on the same day you intend to deliver them. This ensures the frosting remains firm and beautiful.

Can You Freeze Ricotta Cookies?

Yes, baked unfrosted Italian ricotta cookies freeze exceptionally well! This makes them perfect for make-ahead holiday baking. Simply bake the cookies, let them cool completely, and then place them in an airtight freezer-safe container or bag. They can be stored in the freezer for up to 3 months. When ready to enjoy, thaw them at room temperature and then frost as desired.

The unbaked dough, however, does not freeze particularly well due to the ricotta’s water content affecting its texture upon thawing. You can make the dough ahead of time and store it, covered, in the refrigerator for a few days, then bake fresh.

It’s generally recommended to freeze the cookies before they are frosted. Sprinkles, depending on the brand and dye, can sometimes bleed and run as the cookies defrost, which might affect their visual appeal.
