An out-of-this-world grilled cheese sandwich with chicken, pesto, peppers, and two cheeses!
Ingredients
For each sandwich:
- Two slices bread, hearty whole-grain preferred
- 1 tablespoon butter, at room temperature
- 1 ½ teaspoons prepared or homemade pesto (adjust based on bread slice size)
- ¼ cup shredded Gruyere cheese
- ¼ cup shredded Monterey Jack cheese
- 3 slices cooked chicken (rotisserie chicken is a terrific shortcut)
- 2 slices of roasted red bell pepper, optional
- Salt and freshly ground pepper to taste
Instructions
- Butter one slice of bread generously and place it butter-side down on a preheated grill pan or saute pan over medium-low heat.
- Evenly spread pesto over the other side of the bread. Then, layer with the shredded Gruyere and Monterey Jack cheeses, followed by the cooked chicken slices (sprinkled with salt and pepper to taste), and finally, the roasted red peppers, if using.
- Butter the second slice of bread and carefully place it on top of the sandwich, butter-side up.
- Cook over medium-low heat until the bottom slice of bread is beautifully golden brown and the cheese begins to melt and ooze.
