  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup robust molasses
  • 2 tablespoons finely chopped crystallized ginger (for an extra ginger kick!)
  • 1/2 cup chopped white chocolate (for mixing into the dough)
  • 1/2 cup chopped white chocolate (for the decorative drizzle)

Instructions for Baking Perfect Gingerbread Biscotti

  1. Preheat your oven to 350ºF (175ºC). Line a large baking sheet with parchment paper and set it aside.
  2. In a large bowl, whisk together all the dry ingredients: flour, brown sugar, ground ginger, cinnamon, cloves, allspice, baking powder, baking soda, and salt. Set this mixture aside. In a separate measuring cup or small bowl, whisk together the eggs and molasses until thoroughly combined.
  3. With your stand mixer on low speed (or using a hand mixer), gradually pour the egg and molasses mixture into the dry ingredients. Mix until just combined and a cohesive dough forms. Stir in the chopped crystallized ginger and 1/2 cup of chopped white chocolate.
  4. Divide the dough in half. On the prepared baking sheet, form each half into a log approximately 10 inches long and 1 1/2 inches wide. Ensure the logs are relatively uniform in thickness for even baking.
  5. Place the dough logs about 4 inches apart on the baking sheet. Bake for 30-35 minutes, or until the surface springs back gently when lightly touched and the logs are firm.
  6. Remove the baking sheet from the oven and let the logs cool on the parchment paper for about 10 minutes. This allows them to firm up slightly before slicing. Carefully transfer one log from the parchment to a cutting board. Using a sharp serrated knife, cut the log into 3/4-inch thick slices on the diagonal. Repeat this process with the second log.
  7. Arrange the sliced biscotti back on the parchment-lined pans, placing them cut-sides down. Return to the oven and bake for an additional 10-20 minutes. The baking time depends on your preference for dryness and crunchiness; I typically bake mine for another 10 minutes for a perfectly crisp texture.
  8. Once the second bake is complete, remove the biscotti from the oven and transfer them to a wire cooling rack to cool completely. They will crisp up further as they cool.
  9. When the gingerbread biscotti are fully cooled, prepare your white chocolate drizzle. Place the remaining 1/2 cup of chopped white chocolate in a small microwave-safe bowl or a heavy-duty ziplock bag. Microwave in 15-second intervals, stirring or kneading after each, until the chocolate is smooth and melted. If using a ziplock bag, snip a tiny corner off the end. Drizzle the melted white chocolate artistically over the cooled biscotti. Allow the chocolate to set completely before storing.
