Ingredients

For cake:

  • ½ cup unsweetened cocoa powder
  • 1 cup lukewarm water (divided)
  • ½ cup buttermilk
  • 1 ½ cups cake flour
  • ¾ teaspoon baking soda
  • 1 cup sugar
  • ½ cup packed brown sugar
  • 1 stick (8 tablespoons butter, at room temperature)
  • 2 large eggs (at room temperature)

For frosting:

  • 1 ¼ sticks butter (10 tablespoons)
  • 1 ⅓ cups packed brown sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 1 cup heavy cream
  • 2 teaspoons vanilla

Instructions

  1. Preheat oven to 350ºF (175ºC). Butter 3 9-inch cake pans. Line the bottoms with parchment paper rounds and butter the top of the parchment. Set aside.
  2. In a small bowl or liquid measuring cup, whisk together ½ cup of the warm water with the cocoa powder until combined. In another small bowl or liquid measuring cup, whisk the buttermilk with the remaining ½ cup of warm water.
  3. Sift the cake flour and baking soda into a separate medium bowl.
  4. Using an electric mixer, beat the room temperature butter and both sugars (granulated and brown) until the mixture is pale yellow and fluffy, which usually takes about 5 minutes.
  5. With the mixer still running on low speed, add the eggs one at a time, beating until each is fully combined. Scrape down the sides of the bowl as needed. Incorporate the cocoa mixture and blend until smooth.
  6. Add the sifted flour mixture in 3 additions, alternating with 2 additions of the buttermilk mixture. Beat until just combined after each addition, taking care not to overmix. Scrape down the bowl as necessary to ensure everything is incorporated.
  7. Divide the batter evenly among the three prepared 9-inch pans. Each pan should contain approximately 1 ½ cups of batter.
  8. Bake for 16 to 18 minutes, or until the cake springs back when lightly pressed with a finger. Rotate the pans halfway through the baking time to ensure all cakes bake evenly.
  9. Once baked, remove cakes from the oven and cool completely on wire racks before proceeding.
  10. To make the frosting, melt butter in a large saucepan over medium-low heat. Stir in the brown sugar, cocoa powder, and instant espresso powder.
  11. Gradually stir in the heavy cream and continue stirring until the mixture is hot and just about to boil. Reduce the heat to low and cook for another minute, stirring constantly.
  12. Remove the saucepan from the heat and stir in the vanilla extract.
  13. Pour the frosting into a clean bowl and chill for about 1 ½ hours to allow it to thicken to a spreadable consistency. Stir occasionally during chilling.
  14. To assemble the cake, carefully run a thin knife around the sides of each cooled cake layer to loosen it from the pan.
