  • 1 cup plus 2 tablespoons graham cracker crumbs
  • 1 1/2 tablespoons sugar ( a half tablespoon is equal to 1 1/2 teaspoons)
  • 3 1/2 tablespoons butter, melted
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 3/4 cup sugar
  • 1 1/2 tablespoons flour
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla
  • 1/4 cup sour cream
  • 1/4 cup heavy cream

Microwave Caramel Sauce (or use a premium brand of jarred caramel sauce):

  • 1 cup sugar
  • 2 tablespoons corn syrup
  • 2 tablespoons water
  • 1/8 teaspoon lemon juice
  • 1/2 cup hot heavy cream
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 350ºF (175ºC). Line a 12-cup muffin tin with paper liners and set aside.
  2. Mix together graham cracker crumbs, sugar, and melted butter until well combined. Add a well-rounded tablespoon to each muffin cup and tamp mixture into an even, firm layer. Allow to cool while preparing the filling.
  3. In a large bowl, mix cream cheese, sugar, and flour on low speed until smooth and fully combined. Mix in eggs one at a time on low speed, ensuring each egg is incorporated before adding the next, and scrape down the sides of the bowl after each addition. Finally, add vanilla, sour cream, and heavy cream and mix just until combined, being careful not to overmix.
  4. If your batter has visible air bubbles, gently tap your bowl numerous times on the counter to help release them. Alternatively, using the paddle attachment of your stand mixer during the mixing process will help minimize air bubbles from the start.
  5. Divide the cheesecake mixture evenly among the prepared muffin cups, taking care not to overfill them (you may have a small amount of extra batter depending on how full you make each cup). Bake for 20-23 minutes; the centers may still appear slightly jiggly, which is normal.
  6. Remove the cheesecakes from the oven and allow them to cool completely at room temperature for approximately 1 hour. After cooling, transfer the muffin tin to the refrigerator and chill for at least 2 hours. Serve thoroughly chilled, topped with a generous spoonful of caramel sauce.
  7. To make microwave caramel, combine sugar, corn syrup, water, and lemon juice in a 2-cup capacity Pyrex measuring cup. Microwave until the mixture just begins to take on a pale color, typically 4-5 minutes. Watch carefully – microwave ovens vary; my previous microwave would burn it at 5 minutes, but my current one needs almost a full 5 minutes to reach a pale amber hue. The key is to observe closely for the initial color change.
  8. Carefully remove the measuring cup to the counter where the caramel will continue to bubble and deepen to a beautiful amber color. Gradually add the hot heavy cream, a couple of tablespoons at a time (be cautious, as the mixture will bubble intensely, so add slowly and carefully). Once all the cream is added, stir well and then stir in the butter until melted and smooth. Store the homemade caramel sauce in an airtight container in the fridge for up to 2 weeks.
