If you have concerns about foil touching your food, a great trick is to wrap your ingredients in parchment paper first, then wrap that parchment packet in foil. Remember to leave a little bit of space inside the packet for the steam to expand; you don’t need to seal the packets so tightly that they burst, just enough to keep the steam contained.

Mediterranean Sea Bass en Papillote

Mediterranean Sea Bass cooked in parchment with tomatoes, olives, capers and more!

Ingredients

  • 2 6-ounce sea bass fillets (Barramundi works beautifully)
  • 2 slices of lemon
  • 2 sprigs of fresh thyme
  • 1 tablespoon olive oil
  • 2 tablespoons capers, drained and/or rinsed (if salt-cured)
  • ¾ cup mixed, pitted olives (Kalamata and stuffed green olives are excellent)
  • 2 cloves garlic, sliced thin
  • ¾ cup of grape tomatoes, cut in half
  • ¼ cup dry white wine
  • Salt and pepper to taste
  • Parchment paper or parchment bags

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Season the sea bass fillets generously with salt and pepper. Place a slice of lemon and a sprig of fresh thyme on top of each fillet. Carefully insert each seasoned fillet into a parchment bag, or place on one half of a large piece of parchment paper.
  3. In a medium sauté pan, heat the olive oil over medium heat. Add the capers, mixed olives, sliced garlic, and halved grape tomatoes. Sauté for a few minutes, stirring occasionally, until the tomatoes begin to soften.
  4. Deglaze the pan with the dry white wine, scraping up any browned bits from the bottom of the pan. Allow it to simmer for about 30 seconds to reduce slightly (chicken broth can be used as a substitute if desired).
  5. Using a spoon, carefully top each fish fillet with an even amount of the warm tomato and olive mixture. If using parchment paper, fold the other half of the paper over the fish. Tightly fold and crimp the open edges of the parchment bag or paper to create a secure seal. You can use a stapler or paper clips if extra security is needed to prevent steam from escaping.
  6. Place the sealed parchment packets on a rimmed baking sheet. Bake in the preheated oven for 10-12 minutes, or until the packets are puffed and the fish is cooked through and flaky. Carefully transfer the hot packets to individual dinner plates. To serve, use a knife or scissors to gently tear or slice open the top of each packet (be cautious of the hot steam escaping). Enjoy immediately!

Notes

There is definitely enough of the delicious tomato and olive topping to comfortably make 3 servings, even though the original recipe was designed to serve 2. Feel free to adjust the fish quantity or make an extra packet!
