A Versatile Bundt Cake for Every Occasion
I originally discovered the foundation for this streusel coffeecake pound cake recipe in Southern Living, and with a touch of culinary creativity, I tweaked it ever so slightly to enhance its charm and flavor profile. The magic truly happens when a rich, dense pound cake batter is artfully layered with a buttery, spiced pecan streusel, transforming it into what many would consider an elevated coffee cake. Yet, its inherent richness and delightful complexity blur the lines between breakfast and dessert. Frequently Asked Questions About Coffee Cake & Streusel Pound Cake
To help you understand and appreciate this magnificent creation even more, here are some common questions answered:
According to the esteemed Food Lovers Companion, a coffee cake is a delightful sweet, rich, and often cake-like bread typically enjoyed for breakfast or brunch. Its versatility is part of its charm; it can be made with yeast or baking soda, frosted or left plain, and often features a variety of delicious additions such as fruit, a creamy cheese filling, or a signature streusel topping. The name itself hints at its traditional pairing, making it the perfect companion for your morning brew.
The intriguing name “coffee cake” dates back to the late 1800s. It wasn’t coined because coffee is an ingredient within the cake itself – though a coffee-flavored variation does exist – but rather due to the cherished practice of serving it alongside coffee. Its natural habitat is the morning table, making it the perfect accompaniment for a warm cup of joe during breakfast, brunch, or a leisurely afternoon coffee break. It’s a testament to the comforting ritual of shared meals.
Streusel is a wonderfully crumbly topping that adds both texture and flavor to a variety of baked goods. It is traditionally made with a simple yet effective combination of flour, sugar, butter, and often enhanced with aromatic spices like cinnamon. The word “streusel” itself has a fascinating German origin, meaning “to strew” or “to sprinkle,” perfectly describing how this delicious crumb mixture is scattered over dough. It’s not just for coffee cakes; you’ll find streusel gracing the tops of quick breads, muffins, pies, crumbles, and many other sweet treats, adding a delightful crunch and buttery sweetness.
Coffee cake, including our fabulous Streusel Coffeecake Pound Cake, is generally best enjoyed in the morning hours for breakfast or brunch. Its comforting nature and mild sweetness make it an ideal start to the day. Slices can be elegantly plated alongside an array of complementary dishes such as fresh seasonal fruit, crispy bacon or savory sausage, fluffy scrambled eggs, a delightful frittata, or a rich quiche. For a touch of decadence, consider adding a dollop of whipped cream or a dusting of powdered sugar. It also pairs beautifully with various coffee preparations, from a classic black coffee to a creamy latte.
While you might occasionally see it spelled as one word, the universally accepted and majority spelling is as two distinct words: “coffee cake.” This reflects its origin as a cake served *with* coffee, rather than a cake *made of* coffee. Sticking to the two-word spelling ensures clarity and proper communication in the culinary world.
Crafting the Perfect Streusel Coffeecake Pound Cake
Achieving the perfect balance of a rich pound cake and a crumbly coffee cake requires attention to detail. The secret to its incredible moistness lies in the sour cream, which not only adds tenderness but also a subtle tang that complements the sweet streusel beautifully. Using room-temperature butter and eggs is crucial for creating an emulsified batter that bakes up smooth and even. Don’t rush the creaming process; allow the butter and sugar ample time to become light and fluffy, incorporating air that will give the cake its signature texture. When layering the batter with the pecan streusel, distribute it evenly to ensure every slice boasts that delightful ribbon of crunch. Finally, proper cooling is key—letting the cake rest in the pan before inverting prevents it from sticking and helps maintain its beautiful shape.

Streusel Coffeecake Pound Cake

16 servings
A cross between a vanilla pound cake and streusel coffee cake can be eaten any time of day!
Ingredients
Streusel:
- ½ cup firmly packed brown sugar
- ½ cup all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ cup butter
- ¾ cup chopped pecans
Cake:
- 1 cup finely chopped pecans
- 1 cup butter, at room temperature
- 2 ½ cups sugar
- 6 eggs
- 3 cups flour
- ¼ teaspoon baking soda
- 1 teaspoon salt
- 8 ounces sour cream
- 2 teaspoons vanilla
- ¼ cup brown sugar
- 1 ½ teaspoons cinnamon
Instructions
- Combine the first 3 ingredients in a bowl. Cut in butter with a pastry blender or fork until the mixture resembles small peas. Stir in ¾ cup pecans. This is the pecan streusel; reserve this to sprinkle over the top of the cake.
- Preheat oven to 350°. Place the 1 cup of chopped pecans on a baking sheet. Toast till fragrant, about 5 minutes. Stir once in the middle of baking time. Cool for 20 minutes.
- Reduce oven temperature to 325°.
- Beat butter at medium speed with a heavy-duty electric stand mixer until creamy. Gradually add granulated sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.
- Whisk together flour, baking soda, and salt. Add to butter mixture alternately with sour cream, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla.
- Pour half of the batter into a greased and floured (I use Baker’s Joy spray) 12-cup tube pan. Stir together toasted pecans, brown sugar, and cinnamon. Sprinkle over batter. Spoon the remaining batter over the pecan mixture; sprinkle with the reserved pecan streusel.
- Bake at 325° for 1 hour plus 20-30 minutes or until a wooden skewer inserted in the center comes out clean.
- Cool in pan on a wire rack for 10 to 15 minutes; remove from pan to wire rack to finish cooling.
Notes
Try walnuts instead of pecans if that’s your preference.
