Chocolate Raspberry Crumb Bars

Shortbread, fudge, jam and a layer of crumbs makes for an out of this world bar cookie!
Ingredients
- 2 sticks unsalted butter, softened
- 1/2 cup brown sugar, packed
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 cup bittersweet chocolate chips
- 1 cup semi-sweet chocolate chips
- 1 14-oz can sweetened condensed milk
- 1/2 cup chopped pecans
- 1/2 cup raspberry preserves
Instructions
- Preheat oven to 350ºF (175ºC). Line a 9×13 inch baking pan with nonstick foil, leaving an overhang on the sides for easy lifting.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Gradually mix in the all-purpose flour and salt until the mixture is crumbly and resembles coarse crumbs.
- Press 1 ¾ cups of the crumb mixture evenly onto the bottom of the prepared baking dish. Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Stir the chopped pecans into the remaining crumb mixture. Set aside.
- In a microwave-safe bowl, combine the sweetened condensed milk and bittersweet chocolate chips. Heat in the microwave at 30-second intervals, stirring well after each, until the chips are completely melted and the mixture is smooth and glossy.
- Carefully pour the warm chocolate fudge mixture over the hot crust, spreading it evenly across the top with an offset spatula or the back of a spoon.
