Ingredients

Cookie Dough:

  • ½ cup unsalted butter, at room temperature
  • 3 ounces of cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • ½ teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder

Frosting (I usually double this recipe):

  • 1 cup powdered sugar (confectioners’ sugar), sifted
  • 1-2 tablespoons milk (2% or whole)
  • 1 tablespoon light corn syrup (for a glossy finish)
  • ¼ teaspoon almond extract (or ½ tsp vanilla for alternative flavor)
  • Food coloring of your choice (gel recommended)

Instructions

  1. In a large mixing bowl, cream together the softened butter, room-temperature cream cheese, and granulated sugar until the mixture is light, fluffy, and well combined.
  2. Beat in the egg and vanilla extract until fully incorporated. Gradually add the flour and baking powder, mixing on low speed until the dough just comes together. Be careful not to overmix.
  3. Transfer the dough onto a large piece of plastic wrap. Flatten it into a disk, wrap it tightly, and chill in the refrigerator for at least one hour (or up to 2 days) to firm up.
  4. Preheat your oven to 375°F (190°C). Prepare baking sheets by lining them with parchment paper.
  5. On a lightly floured surface or a silicone baking mat, roll out half of the chilled dough to an even thickness of about ⅛ to ¼ inch. Keep the remaining dough refrigerated until you are ready to use it.
  6. Using your desired cookie cutters, cut out shapes from the rolled dough. Carefully transfer the cut-out cookies to the prepared baking sheets, ensuring they are spaced at least an inch apart.
