  • 3/4 teaspoon baking soda
  • 1/2 teaspoons salt
  • 8 tablespoons butter (at room temperature)
  • 5 tablespoons shortening
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 tablespoons white vinegar
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 8 ounces white chocolate (chopped into chip sized pieces, divided)

Instructions

  1. Preheat oven to 350ºF (175ºC). Line cookie sheets with parchment paper and set aside.
  2. In a mixing bowl, whisk together the all-purpose flour, cocoa powder, cornstarch, baking soda, and salt. Set this dry mixture aside. In a separate large bowl, beat the softened butter, shortening, and granulated sugar together until the mixture is very pale and fluffy. Add the egg and egg yolk, mixing until just combined. Stir in the white vinegar, vanilla extract, and red food coloring until thoroughly blended and the color is consistent. Gradually add the dry ingredients to the wet mixture, mixing slowly just until everything is combined. Be careful not to overmix. Gently fold in 3/4 cup of the white chocolate chunks.
  3. Scoop the cookie dough out by rounded tablespoonfuls. Roll each scoop into a ball and place them approximately 2 inches apart on the prepared cookie sheets. Gently press a few of the remaining white chocolate chunks into the top of each cookie dough ball for an appealing finish. Reshape the dough balls slightly if necessary after adding the chocolate.
  4. Bake for 12-13 minutes. The edges should be set, but the centers should still look soft. Allow the cookies to cool on the baking sheets for several minutes before carefully transferring them to a wire rack to cool completely.
